Histoire

La cave Capannelle est assise sur 20 hectares de terrain dans la région de Gaiole dans le Chianti, à Sienne. Appartenant auparavant à Raffaele Rossetti, qui a acheté une ferme du 16e siècle, la production de la cave a commencé en 1974 et le premier Chianti est sorti en 1975. Depuis ses humbles débuts, la cave s'est développée pour produire un Chardonnay IGT, un Solare IGT, un Chianti Classico Riserva DOCG, ainsi qu'un rouge 50&50, un mélange de Merlot et de Sangiovese. L'idée du mélange 50&50 a été inspirée par une récolte exceptionnelle en 1988 et comprend un Merlot produit par Avignonesi di Montepulciano, mélangeant le meilleur de deux mondes. La production de Capannelle s'étend au-delà du vin, et produit 800 litres d'huile d'olive extra-vierge chaque année.

La mise en œuvre d'une approche de haute technologie pour la production de vin et une attention particulière au climat de vieillissement sont un point central de la cave Capannelle. Des cuves de fermentation en acier inoxydable sont utilisées, en plus de toutes les tuyauteries/valves qui sont en acier inoxydable, afin d'assurer un environnement hygiénique et contenu ainsi que pour éviter d'altérer le parfum du vin. Un microclimat est créé par le fait que la cave à barriques se trouve à 3 mètres sous terre et que le climat est contrôlé pour assurer le bon niveau de température et d'humidité. Le vin est élevé dans des récipients en bois,parfaits pour les vins Chardonnay et Solare, et les barriques de vin blanc sont remplacées chaque année, tandis que les barriques de vin rouge sont remplacées tous les deux ans.
