Pale yellow reflects off platinum gold with tiny flecks of pale green in this Sauvignon Blanc as the sun sets over ice capped alpine ridges. At once mouth watering with the elegant aroma of elderflower, fruity pear blossom and bright grapefruit notes, a surprising savory component of pink salt and tropical pineapple finish over a scent of wet flintstone. Soft on the palate without too much acidity, this white wine has a soft, smooth mouthfeel with persistent vegetal, floral, and fruity flavors. Another wonderful example of Kellerei Bozen wine, with all the aromatic and complex flavors you can expect from one of the finest producers in northern Italy.

Delicious on its own, this wine loves to be paired with food, where the bright acidity combines beautifully with oysters on the half shell, charcuterie and fresh tagliatelle with truffles.

Sourcing grapes from single estates with the best marriage of varietal, terroir and microclimate, the Mock Sauvignon Blanc is nothing to be mocked. The expression and complexity gleaned from the steep gravelly slopes at an elevation of 500m is remarkable. With marked extremes between day and night temperatures, the grapes ripen slowly and yield highly aromatic wines. Through careful selection, short temperature controlled maceration and gentle pressing, the juice is fermented and aged in stainless steel resulting in this fantastic Sauvignon Blanc. It will be hard to keep this wine in your cellar, but you can expect this expertly crafted white to hold up for several years.
