A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    En 2013, Tony Bish a fondé le seul domaine viticole de Nouvelle-Zélande spécialisé dans le chardonnay. Le raisin bourguignon a fait l'objet d'un intérêt tout au long de sa carrière pour l'autoproclamé "Chardonnista". Bien que le terroir de Hawkes Bay soit nettement différent de la province d'origine du chardonnay, Tony Bish Wines a réussi à créer une belle gamme unique de vins autour du cépage blanc.

    La cave crée 6 vins au total, et tous sont spéciaux de différentes manières. Le Heartwood Chardonnay a été élevé pendant 11 mois dans des barriques de chêne français et a beaucoup de potentiel pour vieillir davantage en bouteille.

    Dans le verre, il est d'un jaune doré brillant, avec des nuances de vert. Des arômes alléchants de nectarine, d'ananas, d'agrumes et de pêche se combinent à des composants d'épices terreux et chauffants, comme le gingembre, le cèdre et le chêne. En bouche, il est soyeux et légèrement crayeux, avec des fruits jaunes vifs et des notes classiques de noix et de brioche propres au Chardonnay. Un courant énergique d'acidité soutient l'expérience, vous menant vers une finale longue et complexe. Le Heartwood Chardonnay est suffisamment polyvalent pour être associé à une grande variété de plats, mais il se mariera particulièrement bien avec du poulet, du porc ou du poisson.
