Partisans des collines vallonnées de la région de Valpolicella, les vins de Valpolicella sont produits dans une variété de styles à partir des raisins indigènes Corvina, Corvinone, Rondinella et Molinara. Ils vont des rouges vibrants et faciles à boire jusqu'au vin de dessert Recioto sérieusement sucré.
Comment est fait le Valpolicella
Les vins standards de Valpolicella sont élaborés à partir de Corvina et de Rondinella avec un peu de Molinara et de Corvinone souvent inclus dans l'assemblage. Ils ont tendance à être assez légers et élégants avec des notes de cerises rouges attrayantes et beaucoup de fraîcheur. Les vins Valpolicella Ripasso constituent l'étape suivante et sont fermentés sur les peaux de raisin déjà utilisées pour produire l'Amarone. Cela permet d'ajouter beaucoup de caractère, de complexité et de riches notes de fruits secs au vin fini. Il y a aussi les doux Valpolicella Recioto et Valpolicella Superiore qui sont faits à partir de raisins qu'on a laissé sécher pendant l'hiver.

La variété même des vins de Valpolicella les rend très polyvalents en ce qui concerne les accords culinaires. Le Valpolicella standard fonctionne bien avec des choses comme la charcuterie, les fromages à pâte dure et les plats de pâtes à base de tomates, tandis que les vins Ripasso ont plus de profondeur pour les plats plus riches comme le bœuf braisé, les côtes ou le rôti de porc.
