A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Un anniversaire inoubliable avec DAOU & Colomé La célébration de l'anniversaire de ma mère a été rendue encore plus spéciale grâce à deux vins incroyables - DAOU Cabernet Sauvignon 2021 et Colomé Auténtico Malbec 2020. La star de la soirée était sans aucun doute le DAOU Cabernet Sauvignon. Dès la première gorgée, il nous a enveloppés de son étreinte riche et veloutée. Les profondes saveurs de fruits noirs, les notes de cacao et le chêne parfaitement équilibré ont fait de chaque verre un véritable plaisir. C'était un vin à la fois audacieux et élégant, qui a apporté sans effort chaleur et joie à notre réunion. Voir ma mère savourer chaque gorgée avec le sourire n'en a été que plus mémorable. Le Colomé Auténtico Malbec s'est lui aussi révélé magnifique, avec sa pure expression de Malbec de haute altitude. Il était puissant, avec des mûres mûres, des épices et une finale douce et persistante - un excellent complément à la soirée. Ces vins n'ont pas seulement rehaussé notre repas ; ils ont fait partie de la fête, rehaussant chaque toast et chaque conversation. Nous remercions chaleureusement DAOU et Colomé d'avoir fait de cette occasion spéciale un moment inoubliable !

    Les assemblages de vins rouges de Bordeaux

    Les vins rouges de Bordeaux sont pratiquement toujours des assemblages grâce à la pratique locale traditionnelle consistant à combiner différents cépages pour produire un vin complexe et parfaitement équilibré. Les deux cépages dominants à Bordeaux sont le carbernet sauvignon et le merlot ; ils sont couramment assemblés avec du cabernet franc, du malbec et du petit verdot, produisant les meilleurs crus de Bordeaux rouges.

    Principales régions pour les assemblages de Bordeaux rouges

    Le Bordeaux est typiquement divisé en deux régions selon le côté de la Gironde où elles se trouvent. Les Bordeaux rouges de la rive gauche contiennent généralement plus de cabernet, tandis que les assemblages à dominante de merlot sont plus populaires sur la rive droite. Les principales appellations de la rive gauche sont St-Estèphe, Pauillac, St-Julien et Margaux. Les appellations à surveiller sur la rive droite sont Pomerol et St-Emilion. Les assemblages rouges de style bordelais sont également produits dans de nombreuses régions viticoles parmi les plus célèbres du monde, notamment la Napa Valley, le Chili et les Super Toscans d'Italie comme le Sassicaia et le Tignanello.

    Associations alimentaires pour les mélanges rouges de Bordeaux

    Les Bordeaux rive gauche ont tendance à avoir plus de tanins et un caractère terreux ou herbacé, et peuvent être plus austères lorsqu'ils sont jeunes. Ils se marient bien avec des plats plus intenses comme les steaks, le rôti de bœuf et l'agneau rôti. En revanche, les Bordeaux de la rive droite ont tendance à être plus doux et moins tanniques en raison de la proportion plus élevée de Merlot. Essayez de les associer à des viandes plus maigres comme le porc ou même le canard. Les assemblages de style Bordeaux du Nouveau Monde provenant de Napa ou de Toscane ont tendance à être plus riches et plus mûrs, s'associant bien avec des viandes cuites au barbecue pleines de saveurs et des ragoûts de bœuf copieux.
