A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Un anniversaire inoubliable avec DAOU & Colomé La célébration de l'anniversaire de ma mère a été rendue encore plus spéciale grâce à deux vins incroyables - DAOU Cabernet Sauvignon 2021 et Colomé Auténtico Malbec 2020. La star de la soirée était sans aucun doute le DAOU Cabernet Sauvignon. Dès la première gorgée, il nous a enveloppés de son étreinte riche et veloutée. Les profondes saveurs de fruits noirs, les notes de cacao et le chêne parfaitement équilibré ont fait de chaque verre un véritable plaisir. C'était un vin à la fois audacieux et élégant, qui a apporté sans effort chaleur et joie à notre réunion. Voir ma mère savourer chaque gorgée avec le sourire n'en a été que plus mémorable. Le Colomé Auténtico Malbec s'est lui aussi révélé magnifique, avec sa pure expression de Malbec de haute altitude. Il était puissant, avec des mûres mûres, des épices et une finale douce et persistante - un excellent complément à la soirée. Ces vins n'ont pas seulement rehaussé notre repas ; ils ont fait partie de la fête, rehaussant chaque toast et chaque conversation. Nous remercions chaleureusement DAOU et Colomé d'avoir fait de cette occasion spéciale un moment inoubliable !

    Parties de la cave Tollot-Beaut ont quelque 250 ans, le domaine lui-même remontant à la fin des années 1880 lorsque François Tollot a commencé à planter des vignes à Chorey-lès-Beaune. Quelques générations plus tard, la famille est devenue l'une des premières de la Côte d'Or à mettre en bouteille ses propres vins sous son nom et à exporter ses vins aux États-Unis. Aujourd'hui, la propriété appartient toujours à la famille Tollot, et est dirigée par les cousins Nathalie, Jean-Paul et Olivier.

    La famille possède un total de 24 hectares à Chorey-lès-Beaune, Savigny-lès-Beaune, Beaune et Aloxe-Corton et produit une large gamme de vins allant du Bourgogne d'entrée de gamme jusqu'au Grand Cru. Leur Chorey-lès-Beaune classique provient de trois parcelles sélectionnées qui sont toutes exploitées en agriculture biologique et plantées sur des sols calcaires, graveleux et argileux.

    Chaque parcelle donne des caractéristiques différentes, avec la première parcelle sur le côté sud du village donnant des fruits plus parfumés qui sont généralement récoltés plus tôt. Sur le deuxième site du côté nord, le fruit a tendance à être plus sombre et plus riche avec plus de tanins, et le troisième au centre du village donne de petites quantités de fruits très concentrés. Le résultat est un Bourgogne complexe, aux multiples couches, avec une influence subtile du chêne pour permettre à l'éclat du terroir de briller.
