This pretty orange wine is named “Ines in White” after winemaker Mladen Rožanić’s wife which just goes to show how precious this cuvee is. Mladen crafts this complex blend from Sauvignon Blanc, Vermentino, Riesling, Glera, Friulano, Pinot Gris and Pinot Blanc grapes which are grown according to organic and biodynamic principles. After the harvest all the grapes destined for this wine undergo an extended maceration for 70 days to extract intense flavours and aromas and an eye-catching amber hue from the skins.
Following the vinification process the wine then spends six years maturing and developing in used French oak casks until Mladen decides it is finally ready for release. The result is a complex and intricately-layered wine that continues to change and evolve as you enjoy it over the course of an evening.
The nose displays intoxicating aromas of honeycomb, hay and white pepper as well as nutty hints which remind of the oxidative character of sherry wines. These carry through onto the palate where they’re joined by dried apricot, quince and caramel flavours. Thanks to the full body, gentle tannins and intense flavour profile, this is a great wine to pair with a chicken stew, calamari or even octopus dishes.
